After peeling and cutting sweet potatoes into 1×1 inch pieces place in a large steamer. Add about 2 cups of water to the inner pot and place in the steamer. Place Steam Tray into the inner pot, close lid, and steam for approximately 12-15 minutes or until fork tender.
Once sweet potatoes are done steaming place in a large glass bowl, add 3 tablespoons of sweet cream or unsalted butter, 2 tablespoons of organic local honey, 1 tablespoon of brown sugar in the raw, 1 teaspoon of ground cinnamon,½ of a teaspoon of ground ginger, ¼ of a teaspoon of ground nutmeg, ¼ of a teaspoon of pure vanilla extract, and kosher salt to taste. Mash with potato masher or mixer on low speed till desired consistency (I prefer mine more of a chunky consistency)
If desired you may use additional organic honey, toasted chopped pecans, and sweet cream butter before serving or leave the option open to guests to add additional ingredients by placing on the table.
