Ingredients
  • 8 cups shrimp stock may sub with vegetable or chicken
  • 1-2- inch piece fresh ginger grated
  • 1 tablespoon dark soy sauce
  • ¼ cup Shaoxing rice cooking wine may sub pale dry cooking sherry
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons sesame oil dark preferred
  • 1 teaspoon sugar
  • Kosher salt to own taste
  • cup matchstick carrots
  • 24 frozen potstickers your brand
  • 4 cups chopped organic kale or organic frozen
  • 1 pound wild-caught jumbo shrimp
  • 3 scallions thinly sliced tops and bottom
  • Asian chili paste optional
Instructions
  1. Put the shrimp stock, grated ginger, dark soy, Shaoxing wine, vinegar, dark sesame oil, sugar, and kosher salt in a soup pot and bring to a boil over high heat. Adjust the heat so the broth simmers and cooks to lightly flavor with ginger, about 10-minutes. 

  2. Add the carrots, and simmer until tender and cooked through, about 5 minutes. Just before serving, add the Kale, cook until slightly softened, then add the jumbo shrimp, and the dumplings, cook for about 4 minutes, stir in the scallions and cook until the greens wilt, about 1-2 minute. Divide among the bowls and serve.

  3. Serve with chili sauce on the side if desired.
