This deliciously flavorful 30-minute Potsticker Soup is an amazing and hearty Asian-style soup full of rich ingredients such as Shrimp Potstickers, decadent jumbo pink shrimp, organic kale, carrots, scallions, and Chinese spices
Put the shrimp stock, grated ginger, dark soy, Shaoxing wine, vinegar, dark sesame oil, sugar, and kosher salt in a soup pot and bring to a boil over high heat. Adjust the heat so the broth simmers and cooks to lightly flavor with ginger, about 10-minutes.
Add the carrots, and simmer until tender and cooked through, about 5 minutes. Just before serving, add the Kale, cook until slightly softened, then add the jumbo shrimp, and the dumplings, cook for about 4 minutes, stir in the scallions and cook until the greens wilt, about 1-2 minute. Divide among the bowls and serve.
Serve with chili sauce on the side if desired.
