POTATO SALAD WITH ARUGULA, PEAS, & DILL

Potato Salad with Arugula, Peas, and Dill is a fantastic potato salad perfect for any season; made with sliced Red Potatoes, Peppery Arugula, Red Onions, Feta cheese, Sweet Peas, garden Fresh Dill weed,  dressed in a creamy deliciously thick Greek Yogurt sauce.

A few years back my friend and Author of Erica’s Recipes Blog made a wonderful potato salad that I used in a Blogger Roundup called, “20 Salads to remember this Summer” on my blog. I fell in love hardcore with her salad called Spring Potato Salad with Arugula, Peas, and Dill to the point of instantly being inspired to make a revamped version of my own for you guys.

Green Goddess Dressing

Green Goddess Dressing is a beautiful minty colored green blast from the past made with plain Greek yogurt, buttermilk, Duke’s mayo, chervil, chives, anchovy, tarragon, lemon juice, and freshly ground pepper. It’s perfect for your Springtime freshly made salads.

It has been said in the past that Green Goddess Dressing’s origin points to the Palace Hotel in San Francisco in 1923 when the hotel’s executive chef Philip Roemer wanted something to pay tribute to actor George Arliss and his hit play, The Green Goddess. He then concocted this dressing, which, like the play, became a hit.

I have to admit I am an avid collector of anything vintage, including recipes.This dressing is right up my alley and definitely a delicious blast from the past on a wonderful crisp and cool salad. I adore the natural minty tinted color as well as the flavor of this dressing.

Waldorf Chicken Salad recipe is a delicious update to the original New York’s Waldorf-Astoria Hotel’s recipe for Waldorf Salad combining Dukes mayonnaise, Greek Plain yogurt, lemon juice, diced chicken breast, Honeycrisp apples, seedless  sliced Globe grapes, celery, fresh sweet basil, toasted walnuts, and simply seasoned with kosher salt and fresh ground pepper.

Southern Tuna and Macaroni Salad

Southern Tuna and Macaroni Salad is one of the  side dishes we southerners often pick to share at our family gatherings and picnics; made from solid white albacore tuna, al dente macaroni, hard-boiled egg whites, diced red onions, fresh parsley, sliced dill gherkins pickles, mayonnaise and a hint of freshly squeezed lemon juice it makes a perfect simple side dish.

As a small child, I loved my mom’s Tuna and Macaroni Salad to a point of no return and then back again. Yes, that’s a lot of loving isn’t it? Over the years, I have changed her recipe slightly and it has become more delicious than ever to me.

Not a lot, however, Mom uses freshly canned sweet pickle relish, Miracle Whip, yellow onions, and eggs or lemon juice is not added to her recipe. Waldorf Chicken Salad is a lovely update to the original New York’s Waldorf-Astoria Hotel’s recipe for Waldorf Salad combining Dukes mayonnaise, Greek Plain yogurt, lemon juice, diced chicken breast, Honeycrisp apples, seedless  sliced Globe grapes, celery, fresh sweet basil, toasted walnuts, and simply seasoned with kosher salt and fresh ground pepper.

There’s nothing like an update to a wonderful vintage recipe, today I have chosen to slightly change the  Historic Waldorf  Salad by adding chicken and a few other delicious ingredients, such as chicken, yogurt, and fresh basil.

Waldorf Chicken SaladThe lovely vintage Waldorf salad was created at New York’s Waldorf-Astoria Hotel in 1896 by the maître d’hôtel, Oscar Tschirky, the Waldorf salad was an instant success.The original version of this salad contained only apples, celery, and mayonnaise.
