Purple Potato Salad Recipe

This vibrant looking Purple Potato Salad is Easy to make and deliciously gorgeous to look at on the dinner table; made from a spectacular tasting colorful medley of small purple potatoes, new potatoes, small red potatoes, crunchy baby dill pickles, crisp celery, red salad onions, sliced carrots, and garden fresh herbs.

It’s Springtime and the colorful veggies are popping up in every market here on the Memphis border, that means there’s a fresh bag of those brilliantly purple colored potatoes we all love and adore in stores here as we speak. SPICY PENNE PASTA WITH ANDOUILLE SAUSAGE

This Cajun flavored Spicy Penne Pasta with Andouille Sausage is made with pure Southern love combining penne pasta, grilled Andouille sausage, a deliciously creamy cheese sauce, diced tomatoes with chiles, Roasted Red Peppers, onions, fresh garden grown herbs, and Cajun spices.

I wish all dinners came with an easy button, this Cajun Flavored Spicy Penne Pasta with Andouille Sausage only took me about 30 minutes after the grill was fired up to cook. While I waited for my grill to heat, I used the time to do a bit of prep work for my recipe such chopping a medium onion, garlic, and fresh parsley from my herb garden.

Just a hint if you don’t live in an area where you can pick up andouille sausage at your local market you can take one of two routes; either go with a spicy country sausage or you can use a smoked sausage you enjoy. I have actually had to do so myself. The flavor changes slightly but it’s still totally delicious and easy to make for dinner. Continue reading

BROCCOLI APPLE SALAD

Crisp broccoli, Pink lady apples, celery, cranberries, raisins, shredded carrots, and sunflower seeds come together to make an amazing salad with delicious flavors and various textures. The creamy dressing on top makes this Broccoli Apple salad absolutely delicious.

Broccoli Apple salad is one of those salads that’s so deliciously good, it’s hard to remember it’s the main ingredient is broccoli. Broccoli has long been a  love-hate relationship with many adult and children alike over the years. However, Broccoli Apple salad recipe has always been a huge hit with my children and family thankfully.

Green Gumbo, Gumbo z’herbes

Gumbo z’herbes is  a tricky and controversial subject to many,  ask any five people who insist they know what Gumbo z’herbes is, or exactly how Gumbo z’herbes is made, and you’ll get at least 5 or more explanations of what it is, and 5 or more different authentic recipes. It’s like arguing with 5 diva food artists; their way is the only way because that’s the authentic way to make Gumbo z’herbes.

Green Gumbo, Gumbo z’herbes is a traditional Holy Thursday meal for Creole families in New Orléans, the Nine Greens are said to represent the Nine Churches visited on Good Friday in remembrance of Jesus’ walk to be crucified

Green Gumbo, aka Gumbo z’herbes, is always made with various garden greens, which is different from the normal go-to idea Creole Gumbo.  In fact, the more various more greens added to the pot, the merrier. Ms. Leah Chase, the Queen of kick ass Gumbo z’herbes, has been known in the past for stating, one should always stick to an odd number of greens in  Gumbo z’herbes;  even numbers are said to be bad luck according to folklore passed down the generations.

 

green-gumbo1Personally, I think I trust Ms. Leah Chase’s recipe the most out of all the recipes I have come across over the years, being she has always packed the house at Dooky Chase’s on Orléans Avenue in the past with her recipe. However, I have, to be honest, we all know that we can try to imitate that lovely ladies recipe, but we are never going to duplicate perfection. Chicken and Broccoli Alfredo recipe

Every busy household should have a delicious go-to recipe for a quick, easy, tasty meal on the weeknight when they are hard pressed for time. My easy go-to meal in our household is my Chicken and Broccoli Alfredo recipe; combined with a rich, thick, creamy homemade Alfredo sauce with grilled chicken and fresh broccoli that has me in and out of the kitchen in no time.

This hearty dish can take down the biggest of appetites. It begins with leftover tender grilled chicken marinated in olive oil, garlic, and lemon, which is then added to a tasty, creamy, delicious alfredo sauce with fresh broccoli over your favorite pasta, such as fettuccine, linguine, penne pasta, o even gnocchi.

chicken-and-broccoli-alfredo-recipe-1I love marinated grilled chicken and make it often, so we often have leftover grilled chicken in the refrigerator,  which is perfect for a jumpstart on making my  Chicken and Broccoli Alfredo recipe on a weeknight a little faster. So don’t be afraid to use leftover chicken versus starting from scratch when making this recipe. Just marinate the boneless skinless chicken in olive oil, lemon zest, lemon juice, kosher salt, and fresh ground black pepper for about an hour. Grill till done.It’s that simple to make.
