If you live near the Olive Branch Mississippi or Memphis area chances are you may have visited the Hunan Chinese Buffet on Goodman Road, it’s the Mississippi hot spot for lunch after church and always packed. There’s Crab Casserole on their American side of the buffet table that my mom loves so much. Easy to Make Pierogi Lasagna Rolls are for those of us housewives that do not look forward to spending hours in the kitchen making Old Fashioned Polish Pierogies, but enjoy the delicious taste of a homemade pierogi. Traditionally Pierogies are pretty time-consuming being they are made by making a homemade dough and wrapping the dough around a savory or even sweet filling; then cooked in salted boiling water.

My Easy to Make Pierogi Lasagna Rolls are simply made by using cooked Lasagna Noodles filled with creamy homemade mashed potatoes, bacon, mild cheddar cheese, and sliced scallions, rolled, then topped with a creamy sour cream and cheese sauce before being baked to perfection in a 350-degree oven. How simple is that? Ladies and gents, it’s almost foolproof it’s so darn easy.

Southern-Style Cheesy Hashbrown Casserole

Southern-Style Cheesy Hashbrown Casserole is one of the ultimate comfort food casseroles that I make, that has absolutely no canned soup, made with chunky-style hashbrowns, deliciously mild cheddar cheese,  white sharp cheddar cheese, cream,  sour cream, minced celery, chopped onions and seasoned with Cajun seasoning, kosher salt, and freshly ground peppercorns, then placed in a hot oven and baked to perfection until bubbly and  lightly browned.

Southern-Style Cheesy Hashbrown Casserole is a  favorite of the covered dishes here in the South, however, we have heard this fabulous iconic casserole using hashbrowns called by few different names in other regions, such as Hashbrown Casserole, Cracker Barrels Copycat Hashbrown Casserole,  and even Funeral Potatoes in the Midwestern regions of the US. I don’t care whatever name you wanna call it, it’s so darn good!

One of my favorite comfort foods to date is Sicilian-Style Stuffed Peppers; made with Sausage & Couscous. A delicious version of stuffed peppers made with quality Italian sausage, Ramano-Parmesan cheese, couscous cooked with Rosemary and Authentic olive oil, placed in sweet bell peppers served with fire roasted San Marzano tomato and red wine sauce.

Some of you may not realize Couscous has been a part of Sicilian cooking since Sicily was under Arab rule, a period of enlightenment whose cultural, social and economic reforms had a profound and long-lasting influence that is still felt today in Sicilian societies. One of the most common dishes in western Sicily is couscous, an obvious dish from the Arab culture.One of my favorite comfort foods to date is Sicilian-Style Stuffed Peppers; made with Sausage & Couscous. It’s Bbq season y’all and time to bring out those favorite casseroles and share them with friends and family this summer. I love  my Southern-Style Baked Beans because they have that tangy bite to them, yet still have a sweet taste; it’s best of both worlds!
