  • Organic Stewed tomatoes- If need be, you can substitute the Organic Stewed tomatoes with a quality brand of non-organic stewed tomatoes 

  • Low sodium chicken broth– to add to the Dutch Oven while cooking

  • New potatoes or two-bite potatoes

  • Organic fresh thin green beans- May sub with organic frozen green beans in the offseason.

  • Beef Kielbasa or smoked sausage – see the recipe card for the amount needed to feed your family, as the amount can be easily adjusted.

Ingredients
  

  • 2 tablespoons olive oil organic preferred
  • 1 tablespoon unsalted butter
  • 1 large sweet onion may sub with yellow, chopped
  • 3 cloves garlic
  • ½ teaspoon Kosher salt or to own taste
  • black pepper to own taste
  • cups Low sodium chicken broth
  • 1-14- ounce can stewed tomatoes
  • 1 pound green beans organic fresh
  • pounds new potatoes
  • 1 pound Kielbasa sliced, may sub with smoked sausage

Instructions
 

  • Add olive oil and butter to a heated Dutch oven over medium heat. Heat oil, add chopped sweet onion (may sub with chopped yellow onion)—season with Kosher salt and ground black pepper. Saute the onion until slightly softened, then add garlic cook another 2 minutes.
  • Next, add stewed tomatoes, low sodium chicken broth, new potatoes, green beans, and sliced kielbasa to the Dutch oven. Reduce the heat to medium-low and cook for about 25 minutes, or the potatoes are done.
