Chicken- You’ll need about four cups of pre-cooked white meat chicken that you have chopped or diced. You can use grilled, baked chicken or even use a rotisserie chicken from the market.
Celery- Finely chopped celery will add the perfect layer of flavor, texture, and crunch to the salad.
Diced Apples– Such as Gala apples, Red Delicious, Honey crisps, and Granny Smith apples, are the best apples to use (pick one)
Dried Cranberries- Sweet and delicious yet a little tart, the dried cranberries are a tasty addition to the Chicken and Fruit Salad. You can also use dried cherries for a different variation.
Mayonnaise – I prefer to use Duke’s Mayo but feel free to use another brand. I am not a fan of Miracle Whip in this recipe; it completely alters the fresh taste of the salad.
Seasonings- Kosher Salt, freshly ground black pepper, and herbs such as either tarragon or freshly torn basil just before serving are perfect to season and flavor the salad.
Toasted Pecans- are a great addition to the salad as well. I have also used walnuts or Pinenuts in place of the pecans at times.
Fresh Berries– Make a great topper. You can use blackberries, blueberries, strawberries, raspberries, or any fruits you enjoy.
