Method for Carrot Apple Salad

  1. Gather all suggested equipment and ingredients needed for the recipe
  2. Chop the apples, careful not to include the core. (You do not need to peel the apples unless desired.) Slice the celery. Chop the parsley and pecans.
  3. In a large glass bowl, combine carrots, apples, pineapple tidbits, pineapple juice, parsley, dried cranberries, chopped pecans, and sugar *optional*, and kosher salt. Combine all ingredients and chill 60 minutes before serving.
  4. Place in a  pretty serving dish before placing the Carrot Apple Salad on the table.
  5. Serve with chicken, pork, or fish.

  3. Can I use Pineapple Chunks in the salad instead of tidbits? Absolutely. You can even use fresh when in season. 
  4. Which do you recommend using for better flavor cranberry, raisins, or white raisins in this recipe? I actually love them all, so that I would go with your personal preferences.
  5. Can I use Miracle Whip instead of mayo? You can. I would suggest omitting the sugar if you do.
  6. I noticed the recipe does not include lemon juice. Will the apples get brown? No, they will not. The pineapple juice prevents browning and has a better flavor for the recipe.

    This Carrot Apple Salad is my kind of salad. It’s crunchy with different flavors. I had to substitute mayo with a plant-based yogurt due to being vegan, but it created almost the same effect. Other than that, I keep everything the same. A great salad that we enjoy for years to come!
