  • Water
  • Organic Extra-virgin olive oil
  • Lemon Zest
  • Fresh lemon juice
  • Kosher salt
  • Fresh cracked black peppercorns

Tips for making fresh green beans:

  • Place the fresh green beans in a colander.
  • Wash the organic fresh green beans thoroughly in cold water.
  • Inspect all the green beans for any blemishes. If they have dark or soft spots, remove them.
  • Remove the fresh green beans from the wash water.
  • Rinse the green beans again in cold water.
  • Break off the ends of the beans as you wash them.  You can leave the green beans whole or cut into desired lengths. 
  • Make sure all the green bean pieces are similar in length, so they cook evenly.

Frequently asked questions

  1. How do I zest a fresh lemon?  I zest my lemons using a Microplane, just by rubbing the lemon in one direction against the blades. Turn the lemon as you go so you will remove only the yellow part.  You can also use a grater, vegetable peeler, or a knife. Remember, only remove the yellow part as the white part is bitter.
  2. Can I use bottled lemon juice in the recipe instead? I am not a fan of concentrated lemon juice and do not recommend it. However, in a pinch, I would drastically cut the amount down and taste as you go due to the strong acidic flavor it gives.
  3. Can I use vegetable oil instead of the Extra-Virgin olive oil? The flavor isn’t the same and tastes wise; it’s not very enjoyable.
  4. Can I use dried lemon zest that you buy in the spice and baking aisle instead of fresh lemon zest? I do not recommend it. The flavor isn’t the same.
  5. Can I use frozen green beans in the recipe? You can, but you will have to be careful they do not overcook. Remember, you are only steaming the fresh green beans 1 minute on low pressure. By the time your Electric Pressure Cooker heats that are done.
  6. Can I freeze the Lemony Green Beans? I do it all the time and then just thaw on the counter and heat for a few minutes. They taste the same!

Ingredients
  • 1 pound fresh green beans cleaned and cut
  • ½ cup water
  • 1 tablespoon organic extra-virgin olive oil
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • Kosher salt to taste
  • freshly cracked pepper to taste
Instructions
  1. Wash the green beans thoroughly in cold water to remove any debris.

  2. Trim both ends of green beans and inspect for any dark spots or softs spots

  3. Rinse the green beans again before placing them in the instant pot with ½ cup of water.

  4. Cook on low pressure for 1 minute. Note it takes 5-7 minutes for the pressure cooker to heat. The beans will be cooing during that time.

  5. Once the timer goes off, vent the steam from the pressure cooker by moving the pressure release handle to release. Do not put your hands or face near the vent when releasing the hot steam. Open the pressure cooker lid once all steam has been released.

  6. Remove the beans from the pressure cooker to a clean bowl and drain of all water. Combine with the remaining ingredients, using plenty of black pepper. top with the lemon zest.

    What a simple way to bring out the fresh flavor of green beans – with lemon. I’m in the same camp as you – I don’t like bottled lemon juice either- it has to be fresh. Green beans don’t need a lot of fancy ingredients to make them tasty. Your method tasted perfect.
