I can’t even begin to explain how incredible this oldie, but goodie Southern Corn Pudding Casserole recipe is. It has so many wonderful flavors and textures that combine into a beautiful casserole that everyone seems to devour at a moment’s notice. It would seem you can’t just stick to one helping of it.

Yes, I said it and meant it lol!!! This casserole also goes well with almost any meat such as chicken, turkey, beef, ham, and fried pork chops.

Have you ever had the pleasure of sinking a fork into Corn pudding? If not, you seriously have to as soon as possible. You have been missing out on a fantastic Classic Southern casserole. This casserole will be a hit at your next Sunday sitdown dinner. Trust me, even the children will ask for seconds on this one.

Ingredients List

  • Six slices of thick-sliced smoked bacon, crisp-cooked, chopped
  • 1-15-ounce can organic whole kernel corn, non-GMO drained
  • 1-14-ounce can organic cream-style corn, non-GMO
  • 1-8-ounce package corn muffin mix
  • 8-ounces all-natural sour cream
  • One large egg
  • Four tablespoons unsalted butter, melted
  • One small sweet onion, chopped
  • Two organic jalapeno peppers, seeds removed chopped
  • One teaspoon Cajun seasoning
  • One tablespoon of sugar, optional
  • Black pepper, to own taste
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Colby-Jack Cheese
  • Cooking spray

  2. Do I have to use organic ingredients? Absolutely not, that is just my personal preference for components used in my recipes.
  3. What does all-natural mean? It means that the ingredient listed does not contain artificial ingredients or preservatives, and the ingredients are only minimally processed.
  4. Are jalapenos going to make the recipe taste too hot? Not of you remove the membranes and seeds before chopping them.
  5. What can I substitute for the jalapenos? Green bell peppers work well in this recipe.
  6. What is a sweet onion?  Vidalia and the Walla Walla onions are the most common type of sweet onions. These onions lack the sharp, astringent taste of other common onions. 
  7. What corn muffin mix is the best to use in this recipe? I prefer to use the Jiffy corn muffin mix.
  8. Can I use Creole seasoning in place of Cajun seasoning? The taste will be a little different, but if you prefer it, I see no reason why not.
  9. Can this recipe be made ahead of time? Just let cool, cover tightly with foil, and place in the refrigerator until the next day. Reheat on low in the oven before serving.

Ingredients
  • 6 slices thick-sliced smoked bacon fried crispy, divide in ½
  • 1-15- ounce can organic whole kernel corn non-GMO drained
  • 1-14- ounce can organic cream-style corn non-GMO
  • 8- ounces all-natural sour cream
  • 1 large egg whisked
  • 4 tablespoons unsalted butter melted
  • 1-8- ounce box corn muffin mix Jiffy
  • 1 small sweet onion chopped
  • 2 organic jalapenos seeds removed, chopped
  • 1 tablespoon Sugar optional
  • 1 teaspoon Cajun seasoning
  • Black pepper to pwn taste
  • 1 cup shredded cheddar cheese divide in ½
  • 1 cup shredded Colby-jack cheese divide in ½
  • cooking spray to prepare the baking dish
Instructions
  1. Preheat the oven to 350°

  2. Prepare the bacon bu frying in a cast-iron skillet until crispy, drain off the oil, cool and then crumble, divide in ½ and set aside until needed.

  3. Using precaution remove the seeds and membranes from the jalapeno peppers and then chop. Chop the sweet onion. Set to the side until needed.

  4. Divide the cheddar cheese and Colby-jack in halves. (on part for mixture and one part for the topping)

  5. Combine the corn, cream corn, and sour cream, stir to combine. Add the egg, butter, muffin mix, onion, jalapeno peppers, sugar, Cajun seasoning, and black pepper. Stir to combine all the ingredients together and then fold in ½ the crumbled bacon, ½ the cheddar cheese, ½ the Colby-jack cheese, and place in a 9x 11 prepared baking dish.

  6. Place 9x11 baking dish in a preheated oven of 350° and bake for 35 minutes

  7. Remove the baking dish from the oven and sprinkle remaining cheeses and bacon on top of the casserole and place back in the oven for 10- minutes.
