Creamy Crab Salad is one of the most delicious yet easiest semi-homemade salads you’ll ever have the pleasure of making. For years this creamy crab salad has been my secret go-to recipe for impromptu gatherings with friends and family members at reunions, work potlucks, and even church gatherings.
Have you ever had a secret recipe that everyone wants but your recipe is so simple you are embarrassed to give it so you keep it under your hat forever? Confession time has come today. My almost famous Creamy Crab Salad is really semi-homemade; there I said it there’s no going back now. Y’all won’t believe how darn good it really is, yet how stinking easy it is to make.
I have to tell Y’all that there is a kind of little story behind this recipe, it’s a recipe that originally derived from desperation. I was invited a last-minute to dinner by a work friend in the mid-90’s and they asked me to bring a starter for the meal aka appetizer. Guess what? I hardly had any groceries and even less money on hand until payday. I called it, “Single Mom Syndrom”
I had plenty of meal items but not anything I could really use as a starter. What I did have, was a container of plain Jane Deli Sweet Coleslaw, 2 packages of imitation crab meat, shredded carrots, spring onions, celery, parsley, mayo, etc. What in the heck was I going to make with that?
Have you ever heard of the old saying, “If you toss enough $h%t at the wall it eventually sticks?” Well, that apparently was my motto for the day. I decided to chop up those two packages of imitation crab meat, slice some celery and green spring onions, chop up a little parsley, grab a glass dish and dumb that small container of Sweet Deli coleslaw in it and combine the other ingredients with it, then added a little Seasoned salt and freshly ground pepper–presto! Best darn crazy idea ever. It was A-M-A-Z-I-N-G.
I love completely from scratch homemade Southern goodness but I also like enjoying a little free time, so why not take advantage of a great tasting deli coleslaw if you can find one? Heck, I am only human aren’t I? I want a little help here and there and this recipe for Creamy Crab Salad is that recipe that lets you take a few shortcuts in the kitchen on busy days and I love that.
I know some of you are imitation crab haters, so here is a little hint Y’all lump crab meat is also an option. I love this recipe with lump crab, however, sometimes my wallet really detests paying all that hard-earned cash to the lovely cashiers at checkout lol–I really am laughing right now. Creamy Crab Salad
- 16 Ounces Lump crab meat or imitation chopped
- 2 cups Deli sweet coleslaw
- 3 tablespoons Dukes Mayonnaise
- 2 teaspoons Sweet pickle relish
- 3 Spring onions sliced
- ½ cup Celery thinly sliced
- ¼ cup Shredded carrots
- 2 tablespoons chopped parsley
- Seasoned salt to own taste
- Freshly ground black pepper to own taste
- In a glass bowl combine chopped crab meat, deli coleslaw, mayo, sweet pickle relish, sliced spring onions, shredded carrots, chopped parsley, and season to own taste with Seasoned salt and fresh ground pepper.
- Refrigerate for 30 minutes to 1 hour before serving.
- Lump crab meat or intimation may be used in the recipe.
- Serve on a bed of lettuce or on crackers.
- Refrigerate the uneaten portion in a container.
