  1. […] I didn’t stray from the recipe that my sister used. It was about as close to perfect as you can get, so why look for changes? This is the recipe she always used, so I credit her as my source. Printable Recipe INGREDIENTS~ FOR CAKE: 2 ½  cups all purpose flour  1  teaspoon baking soda 1  teaspoon cocoa 1  teaspoon salt 1 ½  cups sugar 2  eggs 1 ½ cups canola oil 1 teaspoon vinegar 1 teaspoon vanilla extract 1 cup buttermilk  1 ounce bottle red food coloring FOR FROSTING: ½  cup of butter 1  eight ounce package of cream cheese, softened 1  box confectioner’s sugar ½  teaspoon vanilla extract 1  cup chopped pecans DIRECTIONS~ Preheat oven to 350 Prepare 3 nine inch cake pans with baking release or baking spray Sift flour, baking soda, salt and cocoa together Beat sugar and eggs together in a large mixing bowl In a small bowl, mix together oil, vinegar, food coloring and vanilla. Add this to the sugar and eggs and beat until combined. Add the flour/baking soda/cocoa mixture and the buttermilk to the wet mixture by alternating the milk and the dry ingredients.Start and end with the dry mixture. Pour batter evenly into prepared pans. Make sure to get rid of any air bubbles by lightly dropping the pan onto a dish cloth. Bake for 25 minutes or until cake springs when touched. The toothpick test works, too. Cool layers on wire rack for approximately ten minutes before turning out of pans. Cool completely before frosting.  To Make Frosting~ Allow butter and cream cheese to soften Sift confectioner’s sugar Cream butter and cream cheese Add sugar, 1/2 cup at at time, continue to mix  Add vanilla extract and nuts and stir with spoon until well blended. Generously frost bottom layer and add second layer. Repeat. Cover the sides fully. Not only is this cake delicious, it makes a gorgeous centerpiece on a dessert table for Christmas.  A couple of years ago, Gloria decided that she would make the red velvet cake for us. We were having a small group, so she decided to make a much smaller version of the cake. She did not adjust the amount of ingredients though. She just didn’t use all of the batter. I guess that’s one way to make sure it still tastes the same.  Rather than adding the pecans to the frosting mixture, she placed them on top and all around the sides of the cake. Different look, same wonderful taste!
