Now let’s get down to business, some of you may have never thrown a Football Party or Tailgate Party so as an expert “Tailgater” and “Football Party Pro” let me help you be a little more successful with your guests. Below I have included a list of items you may want to be sure to have on hand, as well as some Do’s and Don’ts!

How to be a Pro at your next Football Party & Tailgating Party

  • Dress appropriately for your team by sporting team colors and or team jerseys– ladies pink may be cute for some occasions–but don’t opt for that girly pink jersey and not expect the guys to give you a hard time–team colors or jerseys ladies!
  • Let guests know they are welcome to bring various snack items, side dishes, paper products, beverages, cold beers etc. to your party you can even do a potluck if desired.
  • Be sure to buy plenty of paper plates, napkins, plastic silverware, disposable cups– nothing fancy your guests are going to use 4x the normal amount and throw them away.
  • Which brings me to another point be sure to have plenty of trash receptors available in convenient places so that your guests won’t leave a huge mess– If you don’t it’s “Murphy’s Law” they will leave a mess and you will be stuck cleaning it.
  • Make or buy a ton of ice before your party, you will be surprised how much ice your guests will go through–those beers won’t stay cold for very long in a cooler.
  • Have plenty of beer on hand, as a matter of fact unless your house is a “Dry House”  be sure to have on hand 6 beers per person, and 4 different brands or make it a point to let guests know they are expected to bring their own drinking pleasures–most people won’t mind since they know it’s more polite not to arrive empty-handed.
  • Have other beverages on hand for guests that do not wish to drink, a smart choice is usually a few different brands of soda, be sure to get some diet for those who do not consume sugar. I always make a few huge pitchers of iced tea, one without sugar added of course. Bottled water is also a good thing to have on hand.
  • Have a “Key Bowl” it’s a MUST–Make everyone aware as they enter the door that they should place their keys in the bowl.No exceptions!! Place the bowl in a safe place, only release keys to your guests that are safe to drive. It’s your duty as a Host and Friends don’t let friends drive drunk. You will have one guest who may argue, debate with you how sober they are, barter, and plead for their keys–stick to your guns! They will be grateful in the morning.
  • Have plenty of snacks on hand such as chips, pretzels, dips, salsa, cheeses, crackers, finger foods , and  various small appetizers ready and available –your guest are drinking, let’s absorb some of that alcohol before we have a “That Guy Incident”, there’s always going to be the one clown in the bunch that can not hold their alcohol as well as the others–so keep guests grazing.
  • Prepare as many foods as you can ahead of time so you can enjoy the game as well as your guests instead of spending it at the BBQ or Kitchen–You’ll miss all the action.
  • If you are Tailgating be sure to pack up plenty of folding chairs or even lawn chairs, also remind friends tailgating with you to bring theirs if they plan on sitting.
  • It’s also smart idea to pack up a small grill or grill that fits in your vehicle for tailgating, coolers, plenty of ice, paper plates, napkins, plastic utensils, tongs, spatula, aluminum foil, ziplock bags, plastic wrap, snacks, appetizers, side dishes, and meats you plan on cooking . Be sure to pack foods that are less likely to spoil.
  • When packing cold or hot foods be sure to remember to pack properly, you don’t want your friends or family to get sick. Keep cold foods and perishable items tightly covered, as well as on ice to prevent spoilage or contamination. Hot foods can be stored in thermally insulated bags. Keep it safe, if in doubt test temperatures of cold and hot foods to ensure everyone’s well-being.
  • If you are serving dinner items to your guests  at home  or when tailgating, be sure to keep it simple : Chili, grilled chicken, various chicken wings, baked chicken, cold cuts tray, pulled pork sandwiches, hot dogs, chili dogs, hamburgers, corn on the cob, potato skins, jalapeño poppers, potato salads, coleslaw, macaroni salads, etc. (If tailgating be sure that any meats, cold cuts, or sides that have eggs or mayonnaise are kept extremely cold!)
  • Most of all Enjoy the chance to scream and yell rooting for your favorite team!!!

  • 1 jalapeño pepper sliced, remove seeds if desired
  • mesquite dry seasoning, to taste

  • 4 Boneless skinless chicken breasts
  • 8 slices Hardwood smoked bacon
  • 8 slices Colby jack cheese sliced in half
  • 1 jalapeño pepper sliced, remove seeds if desired
  • Mesquite dry seasoning, to taste
  • Kosher salt, to taste
  • Ground black pepper, to taste
  1. Heat oven to 400 degrees
  2. You may wish to have wooden toothpicks on hand to secure the bacon if needed. (Soak toothpicks for 4-5 minutes in water)
  3. Meanwhile, be sure boneless and skinless chicken has been thoroughly washed in cold water to remove any impurities from the meat. Pat chicken dry with clean paper towels or a dish towel, place to the side.
  4. Season chicken with dry mesquite seasoning, kosher salt, and pepper before wrapping with bacon.
  5. You will need 2 slices of bacon for each piece of boneless skinless chicken. An easy method to use when wrapping your bacon around chicken is to secure bacon with a toothpick one side of chicken and carefully wrap chicken, before securing bacon, grab a second slice of bacon, secure wrapped and unwrapped bacon in the same place with a toothpick, wrap the second piece of bacon and secure with a toothpick if desired.
  6. Place in a preheated oven of 400 degrees or hot grill
  7. Place bacon wrapped chicken on lightly sprayed broiler pan, cook for about 25 minutes uncovered. Add 3 half slices of Colby Jack cheese to each bacon wrapped chicken breast, top with some jalapeno slices. Bake for another 5-10 minutes uncovered or till the chicken reaches an internal temperature of 160 degrees if unsure.
If Grilling:
  1. Before heating grill, if you have a grill that everything tends to stick to the grill panels, be sure to coat with a touch of oil or preferably cooking spray (before lighting the grill.)
  2. Heat BBQ grill on medium-high for about 7-10 minutes
  3. Place bacon wrapped chicken on preheated grill and reduce heat to medium heat (be sure to carefully watch for any flare-ups so that you can move you chicken according to avoid them.)
  4. Cook each side about 5-6 minutes, flip bacon wrapped chicken breast over, add 3 half slices of Colby Jack cheese to each bacon wrapped chicken breast, top with some jalapeno slices. Cook for 5 minutes or till done or if you are unsure internal temperature is 160-165 degrees.
  5. Serve with BBQ sauce or condiment of choice if desired.
