This lovely Patriotic Salad is perfect for your Fourth of July Lunch or dinner! Grilled Marinated Chicken with Fresh Summertime Berries makes it a fun show-stopper on your table.
The Fourth of July has long been one of our family favorite holidays! The food, family camaraderie, and fireworks all come together to make an awesome day!
I like to have a little fun and make our table and food items match the festivities of the Fourth of July so this is a perfect menu item!
Ingredients for grilled chicken
- 1/3 cup extra-virgin olive oil
- 1/4 cup fresh lemon juice
- 1/2 cup chopped fresh basil leaves
- 1 large clove garlic, minced
- 1 teaspoon grated lemon zest
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 4 boneless skinless chicken breasts
Directions
Place all ingredients listed (except chicken) in a blender. Blend about 45 seconds. Once done set to the side. Place chicken in a large ziplock bag, (careful not to spill marinade) pour over chicken in ziplock bag. Place in refrigerator for 30 to 60 minutes.
Once 30 to 60 minutes have elapsed, remove chicken from marinade, place on a clean plate.
Preheat grill to medium heat (or grill pan if doing in-house). Place meat on grill or pan, cook on each side 4-5 minutes, or till completely done. Once done place on a clean plate and cool for 10-15 minutes. Once cooled, dice chicken into small bite size pieces. Set to the side.
Ingredients needed for Salad
- 1 cup of Fresh blueberries
- 1 and 1/2 cups of fresh strawberries, sliced
- 1 cup of grape tomatoes
- Feta cheese
- Baby greens
- Dressing of choice
Notes
Be sure to wash all berries, and lettuce before using. This step is very important to rid the berries and lettuce of any debris or possible chemicals. Slice chicken breasts before adding to salad .

July 1, 2014 at 10:37 amYou can use a grill pan Michele ! I sure have when the weather is awful here in Florida! We get a ton of rain during the rain season, so I know that feeling! I would just spray it with a little cooking spray or better yet brush on a bit of olive oil—the flavor will be much better! Patriotic Chicken & Berry Salad will be a great meal for you!
