Southern Sweet Biscuits with Fresh Berries and Cream is an old family Recipe of homemade Southern sweet spoon drop biscuits, fresh strawberries, blueberries, and delightful homemade whipped topping.

I have to tell you our recipe has been inspired by a woman very near and dear to my heart. This wonderful woman is my adoptive Mother. Her name is Wanda Jean, she’s sweet, and a somewhat feisty little lady, originally from Trenton, Tennessee.

Southern Sweet Spoon Drop Biscuits with Fresh Berries and CreamWhen we were children, she would always make what she called her “Spoon Drop” biscuits and of course, if there were a few extra leftovers we would beg her to make her famous dessert using those wonderful biscuits, fresh strawberries, and homemade whipped topping.

Over the years, I have adapted her recipe to specifically be used for this wonderful Summer Dessert. I have updated the method to reflect our modern times as well. I hope you will enjoy this as much as we have over the years.

Southern Sweet Biscuits with Fresh Berries and Cream

Items you will need to prepare recipe
  • Favorite baking sheets, or Cast Iron Skillets
  • Large Food Processor or pastry cutter
  • Large mixing bowl, placed in the refrigerator
  • Measuring cups
  • Wooden spoon
  • Cutting board
  • Knife
  • Dessert bowls

You may be wondering why I have listed the items you will need. I find sometimes it is easier to be prepared when making certain recipes. Biscuits are definitely one of those recipes you will want to be ready for. While the recipe is simple to make, it’s good to be prepared ahead of time.

Ingredients Needed for Biscuits

  • 4 cups sifted white all purpose flour
  • 2 tablespoon baking powder
  • 2 teaspoon salt
  • 2 tablespoons sugar
  • 1 and 1/2 sticks unsalted cold butter, cut into small pieces
  • 1 and 1/2 cups buttermilk

Notes

You will want all your ingredients to be VERY cold. Normally I store extra flour in our freezer. If you do not here is what you can do. Place the 4 cups of flour in your freezer beforehand (for about an hour). You will also want to make sure your butter is VERY cold before using. These are very important steps in Southern Biscuits as they texture changes drastically if you are not using very cold ingredients.

If you do not have a food processor or want to use one, you may use a pastry cutter to cut in flour and butter. Be sure not to overdo it or you will have a breakdown in your biscuit texture.

If you are planning to use our cast iron skillet method, you will want to place it/them in the oven while you are preheating the oven. Please be careful when placing biscuit mixture in the cast iron skillet, as the skillet will be 450 degrees while you are doing it.

Easy updated  modern Method

Using a large food processor, (be sure it is large enough to hold 4 cups of flour and other ingredients).  Place 4 cups of flour that has been in the freezer at least 1 hour in the food processor along with baking powder, salt, sugar, and butter that has been cut into small pieces.  Pulse food processor about 3-4 times only.  Place in the large bowl that has been refrigerated and very cold, place the mixture in the freezer for about 15- 20 minutes.

After 15-20 minutes, remove flour mixture from freezer,  add buttermilk and lightly mix with a wooden spoon ( Be Gentle !! )  Place in refrigerator at this time till oven is preheated

Preheat oven to 450 degrees

You will not be kneading the biscuit mixture, as this is a Southern Spoon Drop Biscuit.  At this time grab your ice cream scoop (Yes that’s right –I said Ice cream scoop! ) You will also want to get out your favorite baking sheet. ( We actually use a cast iron skillet to do our biscuits in . ) If you are using the cast iron method, do not forget to preheat.

Once you are situated, remove biscuit mixture from refrigerator. Using an ice cream scoop  (carefully scoop onto preheated cast iron skillet that has been placed on a heat-resistant area. ) place a scoop of biscuit mixture on favored baking sheet. You will want to space them a bit.  The amount of biscuits made depends on your scoop. If using the standard scoop you should have 12 biscuits at this time.

Bake in a preheated oven of 450 for about 12-15 minutes.

Other Ingredients Needed

  • Fresh Strawberries
  • Fresh Blueberries
  • Homemade whipped topping or your favorite brand

Assembly Method and instructions

Notes:  

We use fresh berries from Plant City, Florida.  Your dessert will taste it’s BEST when you use Fresh Ripe Berries from your farmers Market or Favorite Strawberry Patch.

It is very important you take the time to clean and wash your fresh berries. Removing all stems. We use a solution mixture of 1 part white vinegar and 3 parts water, in a spray bottle. This is a natural cleaning method that will remove any bacteria. You will then rinse berries in cold water. (They will not taste like vinegar) Drain berries in a colander.

Slice all biscuits in half at this time. The place to the side for assembly of your dessert.

In glass bowls or dessert bowls, place a layer of fresh strawberries, a layer of fresh blueberries, one half of biscuit that has been sliced, a layer of homemade whipped topping, place another half of biscuit on top. Arrange top a layer of berries in a decorative manner as shown in the picture.

Place homemade whipped topping in a glass bowl and let your guests place the desired amount they enjoy on top.
