These Southwestern Stuffed Green Peppers with Turkey are not only more healthy than the average beef or sausage stuffed peppers, but they are also packed with a flavorful punch guaranteed not to bore your dinner guests.
I love a good old-fashioned stuffed pepper, don’t get me wrong, but sometimes I want something a little more unique, and these peppers are all about being unique and tasty at the same time. Totally a win-win situation if you ask my opinion. ( I know your thinking. I didn’t ask your dang opinion! )
The recipe is super simple and easy to make, and the cooking time is minimal, just 3 minutes to steam the peppers and about 15 minutes to bake them…
Healthy Southwestern Stuffed Green Peppers with Turkey
- 3 Green peppers halved, cleaned, and seeded
- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 1 pound ground turkey
- 1 medium tomato, diced
- 1/3 cup frozen corn
- 1/3 cup black beans
- 1/2 cup cooked rice
- 1/2 teaspoon oregano
- 1 teaspoon ground cumin
- Kosher Salt
- Black Pepper
- 2 tablespoons fresh cilantro
- 1/3 cup grated Monterey Jack cheese
- 1/4 cup favorite salsa + more if desired
- 1 tablespoon oil
Instructions
- Heat the oil in a large skillet over medium heat. Add the onion, garlic, and sauté until the onion is translucent, about 2-3 minutes. Add the spices and stir to combine. Add the ground turkey meat and cook, stirring, until browned. Add the tomato, black beans, corn, cilantro, and rice. Remove mixture from heat and set aside.
- Preheat the oven to 400 degrees
- Place the clean green peppers that have had all seeds removed and have been halved in a large steamer to steam for 3 minutes or, if desired, longer. Remove with metal tongs and fill with meat and rice mixture. Place in oven-safe baking dish. Top each one with salsa and cheese.
- Bake at 400 degrees for 15 minutes.

- ⅔ cup Shredded Monterrey Jack cheese
- ⅓ cup Salsa your brand
- 1 tablespoon Olive Oil
Instructions
