Awhile back , I decided to try out the Pinterest fade of Baked Eggs in Avocado cups . What were my precise thoughts on this fade ? I actually loved them…However, I thought if this is going to work for me in the morning, I need an easier way. The other thing I thought, was after about 12 minutes baking in the oven two things transpired. The first thought was… I live in Florida this is heating up my house already this morning . The second thought was… I really prefer not eating over done vegetables. I guess what I am trying to say is… I don’t want my avocado being cooked 8-12 minutes .
I really wondered, would I be the DEVIL, if I did all this in my microwave oven? I’m not sure, I thought to myself… So the Devil within decided, let’s just try this and see where it all goes…
- 1 Hass avocado per person , halved, seed removed
- 2 medium eggs, per person
- 2 tablespoons of Asiago cheese, per person
- 2-3 slices of jalapeño pepper, per person
- 1 teaspoon of lime juice, per person
- kosher salt
- fresh ground pepper
Halve the Hass avocados , remove seed, and evenly distribute lime juice over the avocado, to prevent it from browning. You may want to spoon a bit of the avocado out of the center. Be sure to leave the sides. Do not remove the avocado peel . Place 1 tablespoon of grated cheese in center. Gently crack eggs over the avocado . (If you only have large eggs on hand, when you crack the egg remove some of the white by shifting egg back and forth in the shell, as you would for eggs whites.) Salt and pepper to taste. Add a few slices of Jalapeno peppers, to garnish at this time, or wait till done.
Place in small oven safe glass baking dish, (such as Pyrex) Now the tricky part… all microwaves vary in temperature and cook time. I will tell you what we did. We placed 2 sides in at a time, and turned the microwave on normal power, for 1 minute. Watch carefully, you do not want you egg to start popping. If it does turn off the microwave , check your egg. If it is not done wait 5 seconds before turning the power back on and watch the egg to be sure it does not over cook. Our microwave completed ours in 1 minute on normal power.
