Easy Avocado and Egg with Jalapeno is an easy Keto-Friendly Breakfast that is sure to satisfy anyone’s hunger in the morning or even for a quick snack.
Awhile back, I decided to try out the Pinterest fade of Baked Eggs in Avocado cups. Did I happen to mention to you this is totally Keto Friendly and super Delish tasting??? I love avocados, eggs, and spicy jalapeno peppers, so even though I’m not on the Keto Diet this is just an amazingly easy breakfast for me and my loved ones.
I updated my new-found recipe for Easy Avocado and Egg with Jalapeno a little bit to make things more easy for myself or the family in the morning. I really wondered, would I be the DEVIL, if I did all this in my microwave oven? I’m not sure, I thought to myself. So the Devil within decided, let’s just try this and see where it all goes…LOL!
Hey, sometimes you have to think outside of the box right guys? Florida gets so darn hot if you run your oven constantly you’ll be hating life. You can actually also do these Easy Avocado and Egg with Jalapeno in the toaster oven too if you prefer. The choice is yours, right? So whichever cooking method you prefer this is still so super easy to make.
Serves 2
Ingredients needed:

1 Hass avocado, halved, seed removed
-
2 medium eggs
-
2 tablespoons of Asiago cheese
-
2-3 slices of jalapeño pepper, per person
-
1 teaspoon of lime juice, to keep Avocado from browning

kosher salt
-
fresh ground pepper
Easy Instructions

Halve the Hass avocados, remove the seed, and evenly distribute lime juice over the avocado, to prevent it from browning. You may want to spoon a bit of the avocado out of the center. Be sure to leave the sides. Do not remove the avocado peel. Place 1 tablespoon of grated cheese in the center.

Gently crack eggs over the avocado. (If you only have large eggs on hand, when you crack the egg remove some of the white by shifting the egg back and forth in the shell, as you would for egg whites.)

Salt and pepper to taste.

Add a few slices of Jalapeno peppers, to garnish at this time, or wait till done.

Place in small oven-safe glass baking dish, (such as Pyrex) Now the tricky part; all microwaves vary in temperature and cook time. I will tell you what we did. I placed 2 sides in at a time, and turned the microwave on normal power, for 1 minute. Watch them carefully, you do not want your egg to start popping. If it does turn off the microwave, check your egg. If it is not done wait 5 seconds before turning the power back on and watch the egg to be sure it does not overcook. My microwave completed it in about 1 minute on normal power.

Easy Avocado and Egg with Jalapeno
