This is a cute way to dress up your morning without going crazy!The flavors of green peppers, tomatoes, potatoes, and ham play off of each other nicely! This is great for any Breakfast or brunch menu!
- 4 large eggs
- 2 green peppers, sliced in 1/2 and cleaned
- 1 plum tomato diced
- 2-4 ounces diced ham
- 1/2 cup cooked diced potatoes, we used leftovers
- 1 green scallion, sliced very thin (optional)
- Parsley ,for garnish
- salt and fresh cracked pepper, to taste
Pre-heat oven to 400 degrees.
Place green peppers in baking dish. Distribute tomato, ham,and diced potatoes between green peppers, Gently crack eggs over peppers. Salt and pepper to taste. Bake at 400 degrees 12-15 minutes. (Or till eggs are done) Garnish with sliced scallions and parsley, if desired.
